Mint flavoured watermelon-Feta-Couscous / Geminztes Wassermelonen-Feta-Couscous




 
Strange --- the last posting here was from february but I could start this one the same: "It´s rainy out there, the weather in northern Germany at this moment is kind of exhausting" --- we are in july now.
All my veggies in my garden are soaked with water. It rains every day. I don`t know what happened to summer, but I guess it is on holidays, somewhere where it is warmer.


We had some days of heat in may, like last year, and I really hope they come back. They still have 6 weeks!!
Nevertheless, this is the season for all the wonderful fresh fruits out there, and it is also the season where I prefer to eat light and cooling food.
This Couscous here is one of my summer favs. It is quickly made and it is so fresh and sweet and salty at the same time... it is really a summer for my taste bulbs --- at least.

So if you never ever would have thought to combine Watermelon with Feta, you really should give it a try. It matches perfectly.
I know it is not possible to taste the watermelon you buy, but the salad is better as better the watermelon is. Sometimes it contains too much water and not enough sweetness. I hope you get a good one in the store!

Oh, and by the way: Best-case scenario are cooled ingredients, especially the watermelon.

Seltsam....das letzte  Posting ist von Februar, aber ich könnte das heutige genauso beginnen: "Es regnet da draussen. Das Wetter hier in Norddeutschland erschöpft mich grade ziemlich." --- wir sind immerhin im Juli angekommen! Was is`n da los??

Alle mein schönes Gemüse im Garten versinkt grade im Wasser. Es regnet jeden Tag. Ich weiss nicht,was mit dem Sommer passiert ist, aber ich schätze, er ist in Urlaub. Irgendwo, wo`s wärmer ist.
Es gab ein paar echt heisse Tage, wie letztes Jahr, und ich hoffe, die kommen wieder zurück. Sie haben noch 6 Wochen dafür!! Go!

Nichtsdestotrotz, das hier ist die Saison für frische Früchte, all die wundervollen frischen Früchte! Und es ist auch die Saison, in der ich es vorziehe, leichtes und kühlendes Essen zu mir zu nehmen.
Dieses Couscous hier ist einer meiner Sommerfavoriten. Er ist superschnell zubereitet, und so frisch, und süss und salzig zur selben Zeit.... das bringt zumindest meinen Geschmacksknospen etwas Sommer.

Also, wenn ihr noch nicht drüber nachgedacht habt, Wassermelone und Feta zu kombinieren: tut es! Es passt hervorragendst zusammen!
Ich weiss, man kann Wassermelone im Laden nicht einfach probieren, aber der Mix ist natürlich besser, je besser die Melone ist. ich hatte auch schön sehr wässrige mit wenig geschmack, das ist dann natürlich irgendwie ärgerlich. Alos hoffe ich, dass ihr eine anständige ergattern könnt.

Ach ja: die Zutaten im Idealfall natürlich gekühlt, besonders die Wassermelone!

Mint flavoured watermelon-Feta-Couscous
serves 2-3


Ingredients


>> 150 grams instant Couscous
>> 500 grams watermelon- dices (about 1.5 cm )
>> 200 grams Feta cheese, also diced in 1cm-chunks
>> 1 big red onion
>> half a bunch of fresh mint
>> pepper
>> 2 Tbsp pumpkin seeds
>> some good olive oil
>> 5-7 radishes


Method

>> First, prepare the Couscous. Fill Couscous in bowl, add double amount of cooking water (300 ml) and put a lid/plate on the top  - the Couscous needs at least 10 minutes to soak up the water

>> Meanwhile, put watermelon -and Feta dices in a bigger bowl, chop mint , peel and cut the onion in half, then cut it in very thin slices. Cut the radish in quarter. Put these ingredients into the bowl.

>> Sprinkle generously with pepper (best: fresh from the pepper mill) and mix all together.

>> Heat a pan without oil or fat and put the pumpkin seeds into it. When they start to crackle, take them downfrom the heat.

>> With a fork, loosen up the Couscous. Put them on two plates in the middle.

>> Arrange your Watermelon - Feta - Mix around your Couscous.

>> Sprinkle with a bit of good olive oil and the roasted umpkin seeds.

Geminzter Wassermelonen-Feta-Couscousfür 2-3 Personen


Zutaten

>> 150 Gramm Instant Couscous
>> 500 Wassermelonen-Würfel (ca. 1.5 cm Kantenlänge oder mehr)
>> 200 Gramm gewürfelter Feta (ca. 1 cm Kantenlänge)
>> 1 grosse rote Zwiebel
>> ein halbes Bund frische Minze
>> (frisch gemahlener) Pfeffer
>> 2 EL Kürbiskerne
>> Olivenöl
>> 5-7 Radieserln

Zubereitung

>> Zuerst das Couscous zubereiten. Dazu Couscous in eine Müslischale o.ä. geben und mit doppelter Menge kochendem Wasser (300 ml) übergiessen. Mit einem Deckel/Teller abdecken und mindestens 10 Minuten quellen lassen.

>> In der Zwischenzeit die Wassermelonen -und Fetawürfel in eine grössere Schale geben. Minze fein hacken, die Zwiebel schälen, halbieren und in ganz feine Ringe schneiden. Die Radieschen vierteln und alle Zutaten ebenfalls in die Schüssel geben.

>> Alles grosszügig mit Pfeffer würzen und vermischen.

>> Kürbiskerne in eine Pfanne geben (ohne Öl o.ä., ganz trocken!) und erhitzen. Wenn die Kerne beginnen zu knistern und aufzupoppen, vom Herd ziehen.

>> Mit einer Gabel den Couscous auflockern. Auf zwei Teller verteilen und dort in die Mitte häufen.

>> Den Wassermelonen-Feta-Mix um das Couscous rum verteilen.

>> Mit etwas Olivenöl und den gerösteten Kürbiskernen bestreuen.


---> Und jetzt: genüsslich mampfen und den Sommer geniessen!
